Grilled Garlic Sauce Pizza
Ingredients
6 slices Indiana Kitchen bacon cooked and crumbled
1 refrigerated pizza crust dough
2 chicken breasts cooked and chopped
7 slices Mozzarella
1 cup colby jack cheese
3/4 cup milk
1 cup fresh spinach chopped
1/4 cup wine, beer or chicken broth
1 shallot chopped
4 cloves garlic chopped
2 tablespoons flour
2 tablespoon butter
1 tablespoon olive oil
1/2 teaspoon dried basil
salt and pepper
Instructions
1. To make the garlic sauce, add butter and oil to a skillet over medium heat. Once butter is melted, add garlic and shallot, cooking for 2 minutes. Then mix in flour to thicken and cook for 1-2 minutes more, stirring frequently. Add wine, beer or chicken broth, stirring in slowly. Then slowly stir in milk. Add basil and cook for about 2 minutes more. Sauce should be a thick, velvety consistency. Remove from heat.
2. Unroll the dough onto a large piece of heavy duty foil thats greased with cooking spray.
3. Coat the grill rack with canola oil. Get grill up to around 500 degrees F. Place the dough on the rack and peel off the foil.
4. Cook until the bottom of the dough is golden brown, then flip it for a minute or two. Don't let this side get two brown because it will be the side cooking after adding the toppings.
5. Remove dough from the grill, top it with chicken, bacon, shredded cheese, mozzarella, and spinach and then spread the sauce over top of the ingredients.
6. Place pizza back on the grill and close grill lid to contain heat but keep close eye to avoid burning bottom of crust. Pizza is done once cheese is melted, usually no more than 4 minutes.
7. Remove from the grill, slice and enjoy!
