Bacon Cheddar Cakes
Ingredients
5 strips bacon fried and crumbled
1 cup all-purpose flour
1 cup milk
1 large egg
1/2 cup shredded cheddar cheese
1/2 cup green onions finely chopped
2 tbs unsalted butter melted
2 tsp baking powder
1/4 tsp salt
Instructions
1. In a large bowl, mix the flour, sugar, baking soda and salt together.
2. Using a wooden spoon, stir in the milk and melted butter with the dry pancake ingredients. Whisk the egg in a separate bowl before adding to pancake mixture.
3. Stir in the green onions and cheddar cheese.
4. Butter a large skillet, pan or griddle over medium heat.
5. Scoop about 1/4 cup of batter on to the grill at a time and then sprinkle some of the bacon crumbles onto the batter.
6. Cook each cake until you start to see bubbles, then flip and cook for another 2-3 minutes or until each side is nicely browned and the middles are cooked through.
7. Repeat until all batter is used. Garnish with remaining bacon crumbles, cheese and green onion and serve with hot-sauce-maple-syrup combo.
8. Recipe Notes: Save some extra bacon crumbles, cheddar cheese and green onions for garnish. Mix some maple syrup with your favorite hot sauce for a spicy sweet pancake topping.
